Easy Recipes for HOT HOT days outside (*.*)







Mexican Chef Salad


1 head lettuce, chopped

1 onion, chopped

3-4 tomatoes, chopped

8 oz. of shredded cheddar cheese

1 lb. hamburger, cooked and drained good.

1 can of kidney beans drained good

1 small pkg. of Dorito chips.

Lg bottle of Wester dressing(The one with the bull on it)

Salt and pepper to taste

1 avocado(optional)

Fry hamburger and drain.Add drained kidney beans, salt and pepper, and simmer for 10 min. In large bowl prepare chopped lettuce, onion, tomatoes, and shredded cheese. (We use a garbage bag to mix it all up in) When ready to serve toss lettuce mixture with salad dressing, add doritos and hamburger mixture and serve pronto!!!!!!!!!.

Punch for a Crowd

1 pkg. raspberry Kool-aide

1 cup sugar

2 quarts water

1 lg. can of Hawaiian punch

1 1 46 oz. can pinapple-grapefruit juice

1/1 bottle of 7-up

Mix and chill all but soda. Add 7-up just before serving. Makes approx. 4-5 quarts






Pea Salad

6 sweet pickles, diced

1 onion, diced

1/2 lb. cream cheese

2 hard boiled eggs diced

3 1/21 tbsp. mayonnaise

1 med can peas, drained

1/4 tsp salt and a dash of pepper.

Dice pickles, onions and cheese and eggs. add mayooo, salt and pepper, than stir in peas. serve at once.





Watergate Salad (or dessert )

1 large can unsweetened crushed pineapple

1 small pkg. pistacho (instant) pudding and pie filling

Add: 1/2 cup chopped pecans

1 10 oz. bottle of marischino cherries, drained and chopped

1 9 oz. container of cool whip.

Mix well and chill at least one hour before serving. Will keep 2 weeks in refrig. Can also be used as a desert.





Chocolate Philly Fudge (no cook)

4 cups sifted confectioners sugar

1 8 oz. pkg. cream cheese

4 1 oz. unsweetened chocolate squares melted.

1 tsp. vanilla

dash of salt

1/2 cup chopped nuts

Gradually add sugar to softened cream cheese, mixing until well blended. Stir in remaining ingred. Spread into greased 8 in. square pan. chill several hrs. or overnight. Makes 1 3/4 lb.
